Coconut Matcha Lavender Bliss Bites

Matcha Factoid: matcha is known for its L-theanine content, which is an amino acid that increases alpha waves in the brain. These alpha waves help us to feel calm, creative, more alert and mentally focused.
Yes there is some caffeine in matcha but this AA unique to tea helps prevent the caffeine crazies that you may get from coffee. It’s a slow burn.
Not hating on coffee because coffee is my best friend but also a fan of this good green stuff when I’m looking for a pick me up that won’t over stimulate me.
Lavender is also pretty chill, it is used for calming and relaxing.

When prepared properly and sourced with high quality standards like @domatcha Matcha is divine in blended drinks like lattes. But my personal favourite way to have it is in a smoothie or in treats like these little energy bites!

Here’s my recipe

Coconut Matcha Bliss Bites with a hint of Lavender

INSIDE:
1tbsp Summer Harvest Matcha powder from @domatcha
1 cup unsweetened shredded coconut
1/4 cup coconut butter (or coconut oil)
1/4 cup almond flour
2 TBSP coconut flour
1/4 cup raw honey (I used a lavender infused honey - can add a drop or two of essential oil of lavender to any plain raw honey)
A pinch of sea salt
2 scoops vanilla protein powder (optional)
I used @gardenoflifecanada Sport
+ a few tbsp of water as needed

HOW:
Blend everything well in a food processor, add water only 1 tbsp at a time, just enough to get a good sticky texture
Roll in to balls, I like to use a cookie scoop for uniform sizes, alternatively you could press into a pan and chill before cutting into squares
Keep frozen or refrigerated
