Spicy Marinated Chicken with Turmeric and Cumin Seeds

Prep Time: 10-15 minutes
Marinade Time: 6 + hours or simply overnight
Bake Time: 35-45 minutes


Recipe makes
12 pieces, feel free to cut all ingredients in half for 6. 

Ingredients:
the juice of two whole fresh lemons
1.5 tbsp turmeric powder
1.5 tbsp paprika
1.5 tbsp cumin seeds or use cumin powder if thats all you have
6 garlic cloves minced
1-2 tbsp cayenne pepper (use more or less depending on your spice preference- I generally will add about 2 full tbsp but I love spice)
1/2 tsp sea salt
1 tsp fresh pepper
1 tbsp avocado oil, ghee or coconut oil
12 pasture raised - organic chicken thighs, drumsticks or breasts (any skin on or off chicken pieces will work, I prefer boneless thighs with the skin on)
* If using skinless chicken add an additional tbsp of cooking oil to the mix such as Avocado, Ghee or Melted Coconut Oil

Steps:
1. Add all ingredients except chicken to a large bowl and whisk together until combined
2. Add chicken and toss until each piece is covered in marinade
3. Cover and refrigerate, allow flavours to mingle for at least 6 hours. For simplicity and maximum flavour I usually just prepare this the day before I plan to cook it and let it marinade overnight
4. Preheat oven to 350 f
5. Line a baking sheet with tinfoil or parchment paper, If you wish for easy clean up
6. Lay chicken evenly over lined tray and bake for 35-45 minutes depending on the size of your chicken, flipping chicken after 20 minutes
Note: If you use skin on chicken - bake starting with skin side down and flip to skin side up half way to finish, so the skin can crisp up a bit. You may need turn the oven to broil for the last 2-5 minutes to achieve some crispy goodness
7. Serve hot, along veggies, rice, or whatever sides you like. My tip - keep it colourful for maximum nutrient variety!
