Easy Grain Free and Keto Friendly "Oatmeal"
Ingredients:
4 tbsp hemp hearts
2 tbsp chia seeds
3 tbsp ground flax seeds
4 tbsp unsweetened desiccated coconut
1 cup unsweetened non dairy milk such as almond or full fat coconut milk
a pinch of sea salt
1/2 tsp vanilla extract and or cinnamon
Method:
Cold option
stir together everything and soak for 1 + hours or simply overnight
serve with any keto friendly toppings you desire, fresh berries etc
Hot option
stir together ingredients in a small pot and bring to a simmer over low heat for 2-5 minutes, the texture will continue to thicken the longer it cooks, serve hot with toppings of your choosing
Topping suggestions or additions:
fresh berries, raw honey, nut butters, coconut yogurt, plain yogurt
I use Lakanto Monk Fruit "maple syrup" and berries to keep it Keto, and often add a dallop of coconut yogurt or grass fed yogurt as a topping if I am eating this cold.
