Raw Vegan "Chocolate Pudding"
Decadent, vegan chocolate pudding! An easy to make guilt-free dessert recipe.
Provides essential healthy fats and prebiotic fiber from avocados and a good dose of iron and megnesium from mineral rich cacao powder!
This recipe is simple and versatile. It is sweetened naturally but can also be made sugar free and keto friendly by using monk fruit or stevia.
Recipe serves 2.
Ingredients
1 large ripe avocado
1/2 cup coconut milk, unsweetened almond milk or any alternative non dairy milk
2-4 tbsp raw cacao powder or cocoa powder (use less if you prefer or more if you like a darker rich chocolate)
2-3 tbsp pure maple syrup or raw honey to sweeten
or for sugar free / keto sub 5-8 drops of liquid monk fruit extract or stevia to sweeten
a pinch of sea salt
Optional Garnishes
1 tbsp cacao nibs, chopped nuts, coconut shreds or fresh berries
Method
1. Blend all 5 ingredients until very smooth
2. Taste your pudding, incase you would like to add more cacao or sweetener, before refrigeration.
3. Refrigerate for 1 hour - over night (pudding will become fluffier like mousse if left over night)
4. Serve chilled with or without optional toppings
5. Enjoy!
