Savory Oatmeal with Thyme & Lemon Zest
With fall in full swing a warm comforting breakfast is usually preferred over something like a cold smoothie. Warm solid food is also a better way to turn on our digestive system.
I know a lot of oatmeal lovers who swear by oatmeal every morning and some who have never liked oatmeal much at all. Either way if you're not a fan of oats or getting sick of your same old sweet oatmeal, try it savoury to switch things up. Its definitely wild compared to the traditional sweet cinnamon oats but its fragrant and flavourful in a totally delicious and different way!
This recipe makes a perfectly balanced breakfast packed with complex carbohydrates, fibre and healthy fats great for a pre or post workout or even as a dinner side.
Recipe serves one, double the ingredients for two
What you will need:
1/2 cup rolled oats or steel cut (if using steel cut oats - soak them over night in 1 cup water)
1 cup water
1/4 tsp sea salt
1 tsp fresh or dried thyme
2 tsp EVOO or grass fed butter
1 tsp lemon zest
1/4 cup of finely diced onion
3-4 medium mushrooms diced
Optional: for a protein boost serve topped with 2 tbsp hemp hearts, a poached egg or an egg stirred in at the end of cooking
To Assemble:
1. bring oatmeal, water and sea salt to a boil, turn down to simmer for 10 - 15 minutes, stirring occasionally until desired consistency
2. in a separate medium saucepan heat 2 tsp EVOO or grass fed butter. add your onions, mushrooms and thyme, saute until soft and fragrant, season with a pinch of sea salt and pepper
3. stir oats and lemon zest into sautéed onion mixture
4. serve in your favorite breakfastb bowl, topped with an additional drizzle EVOO or tsp more butter and any optional toppings such as a poached egg for protein!
