Paleo Lemon Curd

MAKE PALEO LEMON CURD

Ingredients:

1/3 c raw honey

1-2 tbsp fresh lemon zest

3 whole eggs

1/3 c fresh lemon juice

1/4 c coconut oil or unsalted butter 

optional: a few drops of liquid stevia or monk fruit if you like more sweetness

Method:

  1. In a small sauce pot whisk together the first three ingredients, just until combined

  2. Turn over heat to low-medium, and stir in remaining ingredients

  3. Continue stirring consistently over low - med until curd thickens enough to cover the back of a spoon (about 5-10 minutes) Be careful to keep a watch on the heat and keep stirring, over heating might turn the texture into something more like scrambled eggs

  4. Once thickened, taste to see if you will need more honey or sweetener, then strain out the lemon zest for a smoother curd

  5. Chill curd in a sealable glass jar or container for 4 + hours or overnight

Enjoy over anything you like - yogurt, chia seed puddings, pancakes, on top of other baked goods or desserts like these raw vegan cheesecakes :
