Super Seed Oatmeal Cookies (lactation cookies)
These cookies won’t make you lactate, obviously! But they do provide nutrients that can support pregnancy, replenish nutrients post birth and may support natural milk production in nursing mamas.
These cookies make a great snack while breast feeding, through pregnancy and even for toddlers.
Oats are beneficial for lactation, they are a great source of slow burning carbs, energy rich, provide a small amount of iron.
Seeds provide protein, healthy fats, omega 3 fatty acids, and essential minerals including some more iron and magnesium. Getting more nutrient packed raw seeds in is always great!
Pumpkin seeds are especially high in zinc which is needed for mom and babes immunity.
The coconut sugar content in these is lower glycemic and especially when paired with good fats and protein less likely to spike blood sugar.
These are a real healthy treat but also delicious, great for non moms as well!
Ingredients:
1/4 c coconut oil
1/3 c nut butter of choice - i prefer almond butter. peanut butter and tahini also work!
1/2 c coconut sugar
Flax egg: 1.5 TBSP ground flax mixed w 3 TBSP water, allow to sit for 5 + min to thicken
1 tsp vanilla extract
2 tsp cinnamon
1/4 tsp sea salt
1/2 tsp aluminum free baking soda
1/2 tsp aluminum free baking powder
1 c rolled oats, blended into flour
1 c almond flour
1/4 c unsweetened shredded coconut
1/3 c raw pumpkin seeds
1/4 raw sunflower seeds
2 TBSP chia seeds
optional: 1/2 c dark chocolate chips (i love lilys sugar free chips)
Method:
0. Preheat oven to 350 f
1. First combine all wet ingredients, add in coconut sugar and flax egg, whisk or beat for 1-2 min.
2. Fold in all remaining dry ingredients
3. Roll dough into 14-18 balls, spread evenly over a parchment paper lined baking sheet
4. Bake for 10 min or until edges are slightly golden brown
5. Cool, enjoy
