Grilled Chicken Souvlaki

Chicken Souvlaki
Serves 2

You'll need:
2 medium chicken breasts
4 large freshly minced garlic cloves *use more if you love garlic, there is no limit
1 tbsp dried oregano, or 2 tbsp fresh
the fresh juice of one small lemon
2 tbsp extra virgin olive oil
1 tsp paprika
1/2 tsp each salt and pepper
optional: 3 tbsp plain yogurt (helps with tenderizing)

Method:
Combine all marinade ingredients in a medium sized bowl
Cut chicken breasts into 1-2 inch cubes
Toss with marinade
Cover bowl and refrigerate 4 hours + or simply overnight
I will typically leave this marinating in a sealable glass pyrex bowl which are very handy

Grill or Broil:

Souvlaki is best grilled on a BBQ but can also be roasted on a high heat in the oven.
Preheat your grill or bbq to 450 f
Put your chicken on skewer sticks and then onto grill or a parchment lined baking sheet if using the oven method
Allow 5-7 minutes before flipping the sticks until cooked through (165f internal temp)
*I highly recommend using a meat thermometer to cook chicken to the perfect temperature to avoid over cooking and obtaining all the delicious juicy tenderness possible. over cooked meat becomes dry and tough.

Serve hot with fresh Tzatziki
