Vegan Peanut Butter & Chickpea Protein Cookie
Variations of this recipe are all over and Ive baked them many times, every time slightly different yet every time delicious! I had to actually document the recipe to remake them the same and to share with you.
I love this recipe because it requires only a few ingredients. These are a delicious healthy snack compared to any other cookies I know. To be honest Im not a huge cookie fan, yes I have been told thats crazy. Any cookies I do like must be soft and I think thats why I love these.
They are also packed with fibre, healthy fat and protein from the peanut butter and chickpeas. With minimal natural sweetener these are low glycemic as well. You could try to make them sugar free by using stevia or monk fruit sweetener, I have yet to try but my guess is that it would work just fine with an altered texture.
Ingredients:
1 cup Natural smooth or crunchy Peanut Butter
1/4 cup - 1/3 cup Pure maple syrup, honey or another liquid sweetener (honey is great but I tend to avoid it in baking as the enzymes and benefits are destroyed when heated)
1 520 ml (15 oz) can of well rinsed chickpeas or 1.5 Cups home cooked chick peas
1 tsp natural vanilla
1/2 tsp baking powder
optional: 1/2 cup dark chocolate chips
To assemble:
1. Preheat oven to 350 f, line a baking sheet with parchment paper
2. Puree all ingredients except the chocolate chips in a food processor until very well combined
3. Stir in chocolate chips if using
4. Use a cookie scoop, ice cream scoop or table spoon to portion cookies out of the dough and spread evenly on your parchment lined baking sheet with space in between, I like to roll the dough into balls and press cookies with a fork lightly for consistent shape. The dough doesn't melt with baking so the shape remains consistent
5. Bake cookies 8-12 minutes depending on how big you've made them, I like to make them mini and eat more of them. After baking the cookies should still be very soft when you take them out, golden brown underneath
6. Cool cookies before consuming, they will get firmer as they cool but they are meant to be a softer cookie

Store your cookies in an airtight container on the counter or fridge for up to 5 days if they last that long, they also freeze very well
