Minty Beetroot Detox Salad

Spring is the perfect time for cleansing, and cleansing is best with lots of plant foods in the form of delicious salads! This one contains Beets, Mint, Lemon and Parsley which all contain nutrients that support the livers natural detoxification process. Not only is it perfect for a spring cleanse, this salad recipe is simple yet refreshing and tasty, especially for beet lovers!

Enjoy as a side dish or paired with protein for a light meal.

Salad Ingredients:
      2 cups diced beet root, previously roasted or steamed, peeled and cooled
      1 large bunch of fresh mint leaves finely chopped
      1/3 cup finely chopped fresh parsley

Optional Additions:
      1/4 cup hemp seeds, raw or toasted walnuts or pecans
      goat feta or soft goat cheese (omit if cleansing)

Dressing:
      the juice of 1 large fresh lemon or lime (for extra tang include the zest)
      1/4 tsp ground clove powder
      1/5 cup quality fresh pressed olive oil or avocado oil
      sea salt and cracked pepper to taste

Instructions:
1. combine salad ingredients in a large bowl and set aside
2. combine all dressing ingredients, whisk and pour over salad, toss until well covered
3. top with nuts and or cheese only just before serving
