Fudgy Dark Chocolate Brownie Cookies

These cookies are the dark chocolate lovers dream, fudgy on the inside and lightly crispy at the edges, similar to two bite brownies. Cook them longer for more crisp, less for more fudge.

This recipe is refined sugar and gluten free
Made with almond flour, and minimally sweetened with coconut sugar and maple

You’ll need


one flax egg: 1 TBSP ground flax seed, stirred into 3 TBSP water, allow this to thicken for 10+ minutes

dry ingredients:
1 cup almond flour
1/2 cup raw cacao powder
1/2 tsp baking soda
1/3 tsp sea salt

wet ingredients:
1/4 cup almond butter, smooth
1/4 cup melted coconut oil
1 tsp vanilla extract
4 TBSP coconut sugar
1/4 cup real maple syrup

optional additions:
about 1 cup chopped dark chocolate, about 1.5 90 g chocolate bars, or feel free to use chocolate chips for ease, i love Lilys chips, they are stevia sweetened but you could never tell the difference

1 tsp flakey sea salt for topping, if you like salted dark chocolate this is a nice touch, and looks fancy

Method

1. prepare your flax egg in a small bowl, set aside
2. whisk together dry ingredients in a separate mixing bowl
3. in another separate bowl blend wet ingredients including coconut sugar until coconut sugar is nearly dissolved, you can use an immersion blender, standard blender or electric mixer for this, add in your flax egg last
4. pour dry ingredients into your dry bowl, combine with a spatula, if you want to add in chocolate chunks at this point simply fold them in, rest batter in your refrigerator for 15 minutes
5. preheat oven to 350f as your batter chills
6. evenly scoop out 15-16 balls of cookie dough onto a parchment lined baking sheet, lightly flatten the cookies with a fork, sprinkle with flakey sea salt if using, * i like to use a cookie scoop to divy the dough ensuring each cookie is even

for ULTRA FUDGY cookies bake for 9-10 minutes, they might not seem done but they will set and stiffen slightly as they cool
for more crispy edges bake for 12-14 minutes, just don’t burn them

we like them on the fudgy side, but I am less of a crunchy cookie person
