Fresh Summer Mango and Black Bean Salsa

The perfect fresh summer salsa recipe to share with your friends, to bring to a potluck or BBQ! Great on grilled white fish or fish tacos, served with corn tortilla chips, used as a nacho topping, or even eaten alone or mixed with quinoa as a salad!

RECIPE:

Ingredients: 
1 small can of well rinsed organic black beans or 1 cup of home cooked and cooled black beans
1 cup or 1 large ripe mango finely diced
3/4 cup finely diced ripe tomatoes such as campari or plum tomatoes
1/3 cup finely diced purple onion
The juice of two large fresh squeezed limes
1 tsp sea salt
1/4 cup plus finely chopped cilantro, use much more if you looove cilantro! 

Optional Additions:
1-3 fresh finely diced jalapenos for spice!
1 medium avocado finely diced (this salsa does not keep as well with avocado)

Directions:
1. Stir all ingredients together and store in a sealed jar or container in the refrigerator for up to 4 days.
2. Enjoy on organic corn tortillas, fish tacos or anything else you desire!
