Simple Caramelized Green Cabbage

I know cabbage isn’t exactly seen as a luxury vegetable, its cheap and not very fancy or popular, but I would say it deserves a lot more credit!
Cabbage provides antioxidants, vitamin C, and vitamin K! Cabbage is a higher fibre, low carbohydrate vegetable, great for our gut health and digestion, managing LDL cholesterol, blood sugar, and hormonal health.
Along with brussels sprouts and cauliflower, cabbage is a cruciferous vegetables that helps with the production of Indole and DIM. these help our livers to detoxify excess estrogen that can cause hormonal issues like Estrogen Dominance, PCOS and Endometriosis.

This recipe is one tasty way to get more into your diet!

You’ll need
1 tbsp butter
1 tbsp avocado oil
1 small - medium green cabbage
1 medium yellow onion
sea salt and fresh pepper to taste

a large cast iron skillet

Method
1. Thinly slice your onion while you heat your cast iron skillet over medium heat
2. Add sliced onions, butter and oil to your heated pan to brown
3. Thinly slice cabbage as your onions are browning, stir onions, every minute or so
4. Once onions are browning and maybe even a little burnt on a few spots (this adds nice flavour), add in your cabbage
5. Continue to stir cabbage and onions every minute or so until your cabbage is cooked to your liking and looking caramelized, season with salt and pepper

Thats it!

I love this simple low carb side dish paired with pork and meat dishes, along sausages or really anything you like, there are no rules with vegetables!
